You know while writing this recipe, I was reminded of a funny incident – While sitting in an office presentation in the last row with approximately 200 people ahead of me, my phone suddenly buzzed and the notification bar read – msg from a friend asking – “Khichdi kaise banate he!? (How do you prepare khichdi?)“. And then started a series of to and fro messages with me trying to explain him step by step how to go about preparing masala khichdi. (For all the uninitiated, khichdi is a simple Indian recipe made using lentils(dal) and rice).
Khichdi in its simplest form – i.e. without adding any spices; is a delight to have with potato vegetable. It’s a staple diet of Gujaratis. The combination when had with buttermilk is something which cannot be beaten even by the best dishes of the world. (Well, I am a Gujarati myself so the love is natural. :D). But personally, I like the spiced up Masala Khichdi better. Specially when had with kadhi.
So here is a really simple and healthy recipe for Masala Khichdi which is quick to prepare and can be an ideal dinner or lunch when you are running late and need something tasty and filling!
- 4 cups moong dal and rice (Rice = 1/2 quantity of moong dal)
- 1 cup broccoli florets
- 1-2 cups potatoes (chopped into small cubes)
- 5-6 curry leaves
- 4-5 finely chopped green chillies
- 3-4 tspn garlic (minced)
- 1/2 tspn Asafoetida powder
- 2-3 cinnamon sticks
- 1 tspn cumin seeds
- 4-5 cloves
- 1/2 cup peanuts
- 12 cups water for boiling
- 5 Tspn oil
- 2 Tspn Garam Masala Powder (Mixed spices)
- Red Chilli powder (As required)
- Salt to taste
- Wash the moong dal and rice mixture properly and soak them in water for a about 15 mins while you do the rest of the preparations.
- Heat the oil in a cooker. Add the cumin seeds and as soon as they change colour, add the cinnamon sticks, cloves, curry leaves and asafoetida powder in that order. Once the spices are cooked for about a minute and the oil has acquired their taste, add the green chillies & proportionate salt and fry them a little.(Note: You can add the red chilli powder when you add the green chillies if you want extra spicy dish)
- Once the chillies are done, add the garlic. Let the garlic cook and then add the chopped onions. (Note: Make sure you don't burn the garlic)
- Once the onions change colour, add the chopped potatoes, broccoli florets & peanuts and fry them properly. Once done, add the soaked lentils and rice mixture and water.
- Add the Garam Masala powder and salt (if required) and mix well.
- Cover the cooker lid properly and let the 4-5 whistles blow on a medium flame.
There! Your simple, quick and wholesome recipe is ready within half an hour. Minimal preparation with simple easily available ingredients, this dish can be had either for lunch or dinner – standalone or with curd or kadhi as I mentioned earlier. It tastes super any which ways! Try it – with whatever veggies you like! 😀
